One of my favorite things to make for lunches or dinner is a burrito bowl! If you have tried making a real burrito with a gluten free tortilla you probably know its next to impossible. The tortillas are not that big and they fall apart pretty easy. That’s why I love the burrito bowls so much!

With a burrito bowl you can pretty much add whatever sounds good! I usually have a lot of the ingredients on hand at all times. Here is some ingredients that I might add to mine.

  • Ground turkey, Chicken, or Carne Asada
  • Gluten Free Taco Seasoning if you use Ground Turkey or Beef
  • Pinto or Black Beans
  • Shredded Kraft Mexican Cheese
  • Gluten Free Mexican Style Rice or Brown Rice
  • Fresh Cilantro
  • Avocado
  • Green, Red, and Yellow Peppers
  • Chopped Onion
  • Diced Chilis
  • Diced Jalapenos
  • Olives
  • Shredded Iceberg Lettuce
  • Corn
  • Crushed up Corn Tortilla Chips
  • Salsa
  • Hot Sauce
  • Queso
  • Pico de gayo

These bowls are so easy to make! It takes 20 minutes or less. The most work is just cooking the meat (if you want to have meat) and chopping the veggies. As a side dish I absolutely LOVE jalapeno poppers from the Safeway produce that have cream cheese, bacon, and cheddar cheese on them! So yummy!

If you are having company over this is an inexpensive and easy meal to prepare. It’s fun to be able to do buffet style and create your own bowl! Kids love to create their own bowl too!
